스카이 섬 탈리스커의 거친 바닷바람과 화산암 풍토가 그대로 밴 탈리스커 2008 헵번스 초이스다. 리필 호그스헤드를 짧게 거친 원액은 물처럼 투명하다. 코에서는 짭짤한 해초와 검은 올리브, 구두약과 흑연을 떠올리게 하는 날것의 향이 밀려온다. 46도의 도수로 입에서는 올리브와 재, 풋고추와 자몽에 탈리스커 특유의 후추가 강하게 밀려온다. 어리고 거칠지만 개성만은 뚜렷하며, 여운은 씁쓸한 재와 풀 같은 연기로 길게 남는다.

you cannot not think of mezcal, serious. Olives by the lorryload, ashes, green pepper, grapefruit, and more pepper. Talisker pepper, if you see what I mean. A load of green, grassy smoke
