잔을 들어 천천히 돌리면 버번 캐스크가 입힌 짙은 황금빛이 잔 벽을 따라 흘러내린다. 코끝에 가져가면 스카이 섬 탈리스커다운 알싸한 후추와 짭조름한 바다, 옅은 연기의 향이 단단하게 피어오른다. 한 모금을 머금어 혀로 굴리면 46도의 기운 속에 후추와 시트러스, 잔잔한 훈연이 또렷하게 번진다. 입안에 머금은 술을 굴리면 탈리스커다운 알싸한 후추와 짭조름한 바다가 한 겹 더 단단하게 번진다. 17년을 묵은 이 아일랜즈 위스키는 삼킨 뒤 알싸한 후추와 바닷가의 짠 기운이 길게 이어진다.
