술을 따르고 잠시 두었다 잔을 돌리면 배럴 숙성에서 온 옅은 금빛이 천천히 자리를 잡는다. 코를 가져가면 보리와 익은 배가 먼저 오고 그 뒤로 밀랍과 마른 풀이 이어진다. 55.5도의 한 모금은 곡물의 기름진 단맛으로 시작해 곧 짠 레몬과 후추로 갈라진다. 삼키면 젖은 돌과 옅은 연기가 함께 되돌아오는데, 나이를 밝히지 않은 이 보틀링의 성격이 그 대목에서 드러난다.
