잔을 흔들면 10년밖에 채우지 않은 술답게 옅은 밀짚빛이 가볍게 흔들린다. 코를 가져가면 훈제 연어와 젖은 흙, 부순 슬레이트 냄새가 순서대로 다가오고 사과 껍질이 사이를 메운다. 46도의 한 모금은 레몬과 덜 익은 베리로 시작해 분필과 바닷물 같은 짠기로 이어지며, 초록 후추알이 혀끝을 톡 건드린다. 삼킨 뒤에도 유자 같은 산미가 팽팽하게 남아 여운을 조인다.
