잔을 가만히 흔들어 두께를 살피면 술이 잔 벽에 붙었다가 느리게 갈라져 내려온다. 코를 대면 붉은 자두와 말린 체리가 먼저 오고 그 아래로 삼베와 그을음이 깔린다. 52도의 한 모금은 포트에서 온 단맛으로 시작하지만 곧 짠 레몬과 광물로 넘어가 방향을 바꾼다. 삼키고 나면 후추와 젖은 돌이 함께 되돌아와 1995년 원액다운 단단한 골격을 남긴다.
