Tasting Notes
25년을 리필 버번 배럴에서 보낸 1993년 빈티지로, 노즈에는 유황 기운이 거의 없고 모과와 말린 대추, 그을음이 순서대로 잡힌다. 오래된 와인 저장고와 버섯, 자두의 향이 뒤를 잇는다. 50.9도의 팰럿은 오렌지 스쿼시의 새콤함과 비터 오렌지, 분필 같은 미네랄이 맞물린다. 물을 더하면 초콜릿과 그을음이 또렷이 깃든다. 피니시는 길고 비터 오렌지의 쌉쌀함으로 마무리된다.

first thing first, very little sulphur, if any. All the rest will be a bed of roses then, with quinces, dried dates, soot, old wine cellar, mushrooms, prunes, old rancio, red peach jam, Bellini (champagne and peach purée), earth, and most naturally, liquorice. With water: leather and earth all over the place, plus this little rubber that’s consubstantial to any good modern Springbank
restaurant Palate
it is a tad raw, but that’s an asset to any Springbank. Orange squash, even Fanta (oh the…), bitter oranges, aspirin tablets, chalk (hurray!), plaster… With water: excellent. Chocolate, bitter oranges, chalk, and soot. Some grease too
timer Finish
long, on bitter oranges and plasticine. Lovely!
