잔을 흔들어 향을 열면 마늘과 채소 수프 같은 뜻밖의 냄새가 먼저 다가온다. 물을 더하면 송로버섯과 대파, 다 쓴 성냥의 인상이 차례로 드러나며 감칠맛 쪽으로 기운다. 55.2도를 한 모금 머금으면 다크 초콜릿과 금속 광택제, 흑후추가 겹쳐 몹시 마른 맛으로 이어진다. 삼킨 뒤에도 같은 결이 유지되어 채소와 흙의 기운이 남는, 정통과는 거리가 먼 1993년 리필 버번 호그스헤드다.
