Tasting Notes
호그스헤드에서 32년을 보냈지만 이 보틀링은 무겁기보다 놀랍도록 산뜻하다. 노즈에서는 잘 만든 드라이 슈냉 블랑을 닮은 인동꽃과 라임 차가 명확하게 드러나고 핑크 자몽과 오렌지, 석회암의 미네랄이 뒤를 잇는다. 다만 43.2도의 낮은 도수 탓에 시간이 지나면 힘이 다소 빠진다. 팰럿은 증류소 특유의 기름진 결이 돌아오고 후추와 생강, 에일 맥주의 뉘앙스 위로 복숭아와 자몽의 과즙이 얹힌다. 피니시는 길지 않으나 깔끔하다.

oh! This is wine indeed, like a wonderful dry chenin by a great maker, such as François Chidaine. A great Vouvray, really. Honeysuckle and lime-tea, then rather pink grapefruits and oranges, then grassier and more mineral notes. Limestone. The only problem is that it tends to lose steam over time, maybe that’s the 43% vol., but other than that, it’s a lovely ultra-fresh and clean Springbank that would rather hint at Rosebank in my opinion
restaurant Palate
the distillery’s typical greasiness is back, together with pepper and a little ginger, as well as notes of ale. Beyond all that, the same fresh fruitiness, maybe rather peaches this time, rather than citrus, although there is some grapefruit again
timer Finish
not very long, but this blend of pepper and grapefruits works very well
