Tasting Notes
잔에 담긴 빛깔은 짙지 않지만 향의 두께는 21년을 그대로 보여준다. 말린 과일과 소나무·아카시아 꿀, 밀랍과 졸인 살구가 겹치고 십여 분이 지나면 옅은 훈연이 올라온다. 46도의 입은 허브차와 코코아 가루, 계피의 건조함 위에 토피와 구운 사과의 단맛을 얹는다. 여운은 길지만 떫은 오크가 끝을 조인다.
AITasting Notes
air Nose
starts on all sorts of dried fruits, honeys (pine, chestnut, lavender, acacia), wax, cooked apricot… Goes on with tarte tatin, butter caramel. It gets rather smoky after ten minutes or so, with some great crumb. Notes of old rum and vanilla. Perhaps it just lacks a little bit of vivacity
restaurant Palate
lots of herbal tea and dust, cocoa powder and cinnamon, getting slightly bitter. Yet there’s a lot of light toffee, caramel, cooked apple, candy sugar… It even gets quite hot, but also tannic and dusty. The finish is quite long but again, rather tannic, that’s why my rating is ‘only’
