air Nose
oh wow, herbs, wee roots and flowers this time. That is to say the usual gentian, chicory, gorse, dandelions, buddleia, then a waxier base – as we said – and some kind of precious mead. Let’s say it, this is pure ambrosia! And I suppose it’s the cask that added some fresh whiffs of fern, undergrowth and young moss. Whiffs of plasticine too – the receivers? (enough with your conspiracy theories, S., there are enough idi… I mean, mad people around.)
restaurant Palate
it’s dry, very waxy, probably too dry actually, with too much cardboard perhaps. It is lovely whisky, but I believe oxygen has taken its toll here. Teas, dried things, paper, stale coconut water… But it does improve, with more honey, candied fruits…
