Tasting Notes
셰리 55퍼센트에 버번과 럼을 더한 2011년 로컬 발리 11년으로, 캐스크 조합에 비해 향은 오히려 절제되어 있다. 노즈는 젖은 석회암의 광물성이 앞서고 굴과 레몬 껍질, 다시마의 해안 인상이 뒤를 받친다. 53.1도의 팰럿은 의외로 테킬라를 닮은 결을 보이며 레몬과 소금, 아가베의 인상이 순서대로 드러난다. 크리미한 질감이 바탕을 잡아 주지만 단조로운 바닐라 단맛으로 흐르지는 않는다. 피니시는 길고 석유 계열의 뉘앙스와 짠 타르가 남는다.

it’s not that it’s shy, not at all, but I don’t think its got the high impact of the 16, this one’s rather kind-of-gentle, rather mineral (wet limestone) and of course rather coastal and lemony. A plate of oysters with a few lemon rinds and quite some kelp. With water: the usual old damp tweed jacked and our beloved wet dogs (we’ll build you a memorial, dogs). Coffee

very good, a little tequila-ish and bizarrely aquavity (yeah I know), with a lot of lemon, salt, and yes, agave. Really, it’s got a mezcaly side. The base is creamy and sligthly syrupy, but that only adds texture, no dumb vanillaness. At all. With water: artisan tequila from Campbeltown, now that’s interesting
