Tasting Notes
셰리 리필 호그스헤드에서 온 이 2007년 병입은 처음엔 조용하다. 잔을 여러 번 흔들어야 왁스 광택제와 니스, 밀랍이 서서히 얼굴을 내민다. 코를 더 가까이 하면 꽃꿀과 들꽃 향이 열리고 새 고무줄과 달군 쇠 같은 냄새가 끝에 붙는다. 한 모금 머금으면 인상이 달라져 고무와 탄 빵, 졸인 과일 소스가 46도를 타고 힘 있게 퍼진다. 삼킨 뒤에는 온갖 구운 것들의 고소함이 남아 소박하지만 만족스러운 마무리를 만든다.

air Nose
rather discreet at first nosing but getting nicely fragrant, with quite some wax polish, varnish (good varnish ;-)), beeswax… Very delicate, in fact, not too expressive but quite refined and elegant. Notes of nectar, flowers from the fields, getting a little smoky and rubbery (new rubber band). Very nice, although there’s also some smells of hot metal (hot still?)
restaurant Palate
more powerful this time, quite rubbery again, with some burnt bread, overcooked fruit sauce. Nice, quite balanced and showing lots of oomph but not too complex. The finish is very nice, though, on all sorts of roasted things. In short, a very good one, very enjoyable. 87 points . Springbank NAS (46%, OB, House and Tree label, Germany, mid 1990’s)
