Tasting Notes
짙은 앰버빛이 잔 속에 두껍게 고인다. 퍼스트필 셰리 호그스헤드가 남긴 가죽과 흙의 향이 앞서고 담뱃잎과 말린 버섯, 팔각의 냄새가 그 뒤를 따르며 짠 기가 사이를 파고든다. 56.3도의 입안은 거침없어 진한 허브차와 칵테일 비터스, 세비야 오렌지와 겨자 가루가 차례로 드러난다. 2011년 증류액의 여덟 해는 짧지만 셰리는 맑고 여운은 숯불에 그은 소스처럼 짙게 남는다.

a big leathery, earthy sherry. Lots of tobacco leaf, mushrooms, marmite, star anise, cough medicine and some rather punchy saline notes. Good so far but a tad sharp. With water: quite salty now, a touch of cigarette ash, graphite and various medicines
restaurant Palate
Strong herbal teas and extracts, cocktail bitters, Seville orange, mustard powder and salty bacon. Quite robust, no nonsense stuff. And the sherry is pretty clean which is good. With water: sweeter and oilier now. Lightly tarry, more ointments, some grilled shellfish and BBQ sauce
