잔을 천천히 돌리면 1979년 포트 엘렌이 32년의 시간을 머금은 옅은 페놀과 짠 미네랄 향을 풀어 놓는다. 잔을 코끝에 가져가면 폐쇄된 아일라 증류소 특유의 흙냄새와 트로피컬 과일 톤이 겹쳐 일어난다. 한 모금을 머금으면 53.9도의 도수가 짠 레몬과 잘 익은 살구를 동시에 따라간다. 마지막에는 빈티지 포트 엘렌의 짭조름한 잔향이 입가에 오래 남는다.
