Tasting Notes
잔을 들어 빛에 비추면 색이 옅은 금빛에 가깝고 셰리 캐스크치고는 담백해 보인다. 코를 가져가면 죽처럼 걸쭉한 곡물 냄새와 사워도우, 그을음이 차례로 올라오고 이어 붕대 같은 약재 향이 스친다. 한 모금을 머금으면 라임즙과 소금, 블러드 오렌지의 산미가 혀를 곧게 훑는다. 물을 더해 다시 삼키면 후추와 신 과일이 살아난다. 끝에는 흑설탕과 건포도의 단맛이 슬며시 돌아온다.

probably not the dirtiest young Springbank ever, but I do find it very porridge-y, full of sourdough, soot, concrete, beach pebbles and with these typical notes of 'new electronics'. Tends to become pretty medicinal too (bandages), but it hasn't quite got these very mineral notes that were to be found in earlier batches. No raisins this far, hurray. With water: raw wool and wet dogs. We are sorry, dogs! Damp chalk too
restaurant Palate
pure lime juice with some salt and some blood oranges, then drops of orange liqueur. Perhaps a little simple but what it does it does good. With water: more pepper, greens, and sour fruits, cherries, fermenting raisins…
timer Finish
rather long, a tad rounder, with some muscovado sugar. Raisins indeed in the aftertaste
