잔을 흔들어 향을 올리면 11년치 셰리 숙성치고는 색이 제법 짙게 흔들린다. 코를 대면 붉은 자두와 볶은 보리 향이 먼저 오고 그 뒤로 젖은 흙과 연기가 따라 붙는다. 57도를 한 모금 물면 혀 양쪽이 팽팽해지면서 흑설탕과 검은 후추가 거의 동시에 열린다. 물 몇 방울을 더해 삼키면 짠 감초와 코코아의 결이 드러나고 여운은 마른 재 위에서 정리된다.
