Tasting Notes
옅은 금빛이 맑게 잔을 채운다. 셰리가 개입하지 않은 버번 배럴 숙성답게 향은 곧고 단순하다. 생양모와 공작 점토, 젖은 분필과 슬레이트의 냄새가 차례로 올라오며 광물의 골격을 그대로 드러낸다. 입에서는 감귤과 후추, 바닷물과 사과즙이 넷뿐인 재료처럼 정확하게 놓인다. 여운은 길지 않지만 감초와 민트, 레몬과 재가 흐트러짐 없이 이어지며 이 위스키의 담백한 아름다움을 매듭짓는다.

the house style when there’s no sherry. Direct, slightly fermentary, with raw wool, modelling clay, damp chalk, and slate… You get the idea—it’s rather mineral, simple, almost youthful, yet to me, of an almost Caravaggesque beauty. Nothing is missing, and nothing is superfluous
restaurant Palate
citrus and pepper, plus seawater and apple juice. That’s it—it’s little, and it’s a lot. A new kind of old Springbank—abstract, simple, magnificent. Isn’t complexity overrated in whisky? (Of course not—pure b*ll*cks.)
